Spinach Dip & Taco Pie Recipes

Had our first frost of the season this morning. The hay field out the front door looked so pretty. Especially with the sunlight glistening off the grass tops against a deep blue sky. We typically see deer when we look outside – but not today. You’d almost think they know when hunting season has opened . . . they just disappear. While we’ve seen a lot of different types of animals around here – we have a first. An eagle. We can’t lay claim to having seen it, but our neighbor John was out taking pictures and came across this eagle in a field. He stopped long enough to get a few pictures and shared this one with us. Quite amazing.

Went to a Czech reunion yesterday in Crockett. It is an annual event held at the Tejas Church and as always there’s lots of good food and visiting. The kolaches are always a favorite of mine as are the sausage and sauerkraut. I usually take Knorr Spinach Dip because it is something everyone can snack on until we get to the ‘real’ food. I don’t make it here at home, mainly because I love the stuff and would probably end up eating the whole bowl myself! The recipe been around a long time, and just about everyone has heard of it – but, in case you haven’t I’ve posted the recipe below.

Knorr Spinach Dip Recipe


  • 1 package (10 oz.) frozen, chopped spinach (do NOT use fresh)
  • 1-1/2 cup sour cream (onion dip works well in a pinch)
  •  1 cup mayonnaise
  • 1 package (4 oz) Knorr dry vegetable soup mix
  • 1 can water chestnuts (8 oz) finely chopped (optional)
  • 3 green onions finely chopped (tops too!)


  1. Defrost and squeeze spinach completely dry
  2. In a medium-sized bowl, mix together spinach, sour cream, and soup mix
  3. Add in water chestnuts and green onions.
  4. Cover and refrigerate over night or for at least 2 hours

Serve with crackers, canape toast, chips, etc. .  And, get more ideas for presentation and serving at this link.

Taco Pie


Otherwise things have been pretty quiet around here. Haven’t even worked in the yard – and I would bet the leaves are wanting raking again. I have been looking for some new winter-type recipes. New soups, stews, and such – and found a recipe for Taco Pie. Unlike my ‘Cat-lady’ Casserole   which uses corn tortillas – this recipe calls for a packaged biscuit mix to make the crusty-topping. Haven’t tried it yet, but it does sound good with green chilies, cheese, and onions as part of the ingredients – pretty sure it’ll be a winner. And, looks like something that will freeze and re-heat well. It is very much the same process as the Hamburger Pie   – you can get the Taco Pie recipe here.

Funny Faces

Funny how some things will catch your eye. Getting ready to fix candied yams for lunch one day this week and noticed my sweet potato was smiling at back at me – whiskers and all. And, while the yam was in a good mood, the candle in the breakfast room was not. Notice the frown on the candle’s ‘face’ – guess something’s got it in a snit.
