Leftover Recipe: Spinach-Chicken Casserole

darkcloudsLazy weekend. Had planned to do smoke some sausages and boudain – but just thought the weather looked a little too iff-y. Be my luck I’d get everything going and the rain would start – in spite of the fact that there was only a 10% chance of showers. Didn’t even want to chance hanging the clothes on the outside line – so everything is scrunched up on the back porch on my collapsible drying rack. That’s ok. Hauling soggy blue jeans through the rain around the house is not my idea of fun.


Spinach-Chicken Casserole


Have a new recipe for leftovers – at least new for us. Started out with about a cup of  leftover cooked  spinach.  It would be a quick fix if you have any of the ingredients leftover.  All you need are chicken, noodles, spinach, white sauce, mozzarella cheese and green onions. I’ll give the recipe for making from scratch – but you can replace any of the ingredients with whatever leftover ones you have available. BTW – this recipe makes 4 servings.


1 large chicken breast cut into thin bite-sized pieces. Cook in 1 tablespoon olive oil and 1 tablespoon butter in a medium hot skillet. While cooking, season chicken with 1 teaspoon minced dried onion pieces, salt and pepper – to taste. Once cooked, set aside.

1-1/2 cups cooked pasta noodle of choice

1-1/2 cups white sauce. To make white sauce from scratch, melt 2 tablespoons of butter in a saucepan (careful not to let it scorch). To melted butter add a heaping tablespoon of flour. Whisk together – no lumps! Add 1-1/2 cup milk (I like to use half & half). Continue to whisk. Add salt and pepper to taste. Continue to stir over low -medium heat until thickened. Hint: Add a dash of nutmeg along with the salt and pepper for added flavor.   (Note:  if the sauce is too thick, whisk in 1 teaspoon of water at a time;  if too think continue to cook over low heat.)

1/2 to 3/4 cup cooked spinach

2-3 green onions and tops, cleaned and chopped

1 cup shredded mozzarella cheese


spinachchicken2In a large bowl, mix all ingredients EXCEPT mozzarella cheese and pour into a buttered baking pan (approx. 7″ x 10″).

Evenly spread cheese over top of chicken-spinach mixture.

Bake in oven at 375 degrees until top is bubbly.

Serve and enjoy


What is it?

Saw this bug sitting on Kaleb’s car under the carport. At first we thought it was a black bee – but on closer inspection, looks more like a cross between a bee and a fly. Has a fuzzy body with fly like wings.  It was pretty much all black – I’ve lightened it some to show details.   Whatever it is – it’s the first one of its kind we’ve seen around here.
