Fettuccini Alfredo – Low Fat

HealthyHomestyleCookingCookbook There’s something warm and comforting about eating Fettuccine Alfredo – especially on a cool day. It’s been nice and cool around here so I got out my favorite cookbook – Healthy Homestyle Cooking by Evelyne Tribole and whipped up some ‘low fat’ Alfredo sauce. While the recipe calls for fettuccine – we like it on any kind of pasta – especially penne.

 

What you’ll need:

  • 12 ounces pasta of choice
  • 1 cup low-fat evaporated milk
  • 1/2 cup half-half
  • tablespoons butter (cut in small pieces)
  • 1-1/2 cup fresh Parmesan cheese (grated)
  • 2 tablespoons fresh chive (snipped)

In a medium sauce pan – heat the milk, half-and-half and butter over medium heat just until the butter is melted and the mixture is hot.

Gradually stir in 1-1/4 cups of the Parmesan cheese.

Cook and stir until the cheese has melted.

Drain pasta and add to hot mixture. Toss until well coated.

Plate the pasta and sprinkle with remaining 1/4 cup of Parmesan cheese and chives to garnish.

Based on the above recipe, regular Alfredo sauce is made healthy as follows (before/after):

  • Calories: 644 vs. 397
  • Fat (g): 44 vs. 13
  • % Calories from fat: 62% vs. 30%
  • Cholesterol (mg): 139 vs. 35

leaves2We did end up raking lots of leaves. David got out the blower and helped – bless him! He installed the little gate in the front yard this summer so we could  just blow the leaves right out into the hay field this fall. No more bagging or carrying them out to the burn ring in the back. That was always a lot of work.

Also saw the biggest walking stick insect I’ve ever seen in my life. He had to have been at least 6-7 inches long.   I thought a stick from the oak tree had gotten caught on the deck chair – and went to knock it off. But – whoa!!!! – it was moving. Went and got the camera so I could get a picture of him. After that I moved him out to the flower bed – thought it might be a little more friendly territory.  walkingstickbug

Did get my screen doors painted with a coat of Polyurethane – made them look 100% better and since it is raining. . . again . . . should give them some much needed protection.
