Does ‘Sugar Free’ Really Mean ‘No Sugar’?

icbisfMy brother-in-law, Dr. Jack Moncrief – a world renown Nephrologist – answered this question for me when I mentioned a few months back that I was going to put up a website with ‘sugar free’ recipes. You can read his response at ‘I Can’t Believe It’s Sugar Free’ where I have the website online – in a minimalistic format. Still working on it – but then my nature seems to always be working and expanding on something. David likes to call me ‘tweak-amatic’ – says I’m never happy with anything and always want to tweak it – even if it doesn’t need it.

At any rate. . . . you’ll find all kinds of recipes on I Can’t Believe It’s Sugar Free – (more will be added each week), along with conversion tables, hints and tips. I’m working on ‘The Pantry’ where there will be useful links for all kinds of information – calorie counters, restaurant food info, etc. – gadgets and other helpful kitchen stuff. coconutpieI’m trying to limit our desserts but gave in this weekend and made a quick and easy Coconut Pie – sugar free, of course. Took about 15 minutes to put the whole thing together – too easy – David wanted another one when ‘we’ finished off the first. Here’s how to whip one up if you want to give it a try. Ingredients: 1 SF pie shell, 2 small packages SF Instant vanilla pudding (follow directions for pie), 1 small container Cool Whip and 1-1/4 cup coconut (retain 1/4 cup to toast for garnish). Toast 1/4 cup of the coconut in a non-stick skillet and set aside to cool – stir it while toasting over medium heat so it won’t burn. Make pudding following box directions for pie. Stir in 1 cup coconut (Optional: add 1/4 teaspoon coconut flavor), pour into shell. Cover with Cool Whip and garnish with toasted coconut. Chill. That’s it. It is so simple and soooo good!
