Cortizone 10 – Eczema

You’ve heard me say that most of the time items you see advertised do not deliver the goods.  However, found one more product I can add to my short list of products that actually do work.  That would be Cortizone 10 for Eczema.  We’ve always been fans of the regular Cortizone ointment for bites, itches,  etc. – but when I saw their new product  targeting eczema – thought it might be worth a try.  So far nothing else had worked.  Not even the doctor’s prescription!    Sure enough – after only 2 days of use, all of the ‘red’  was gone as was the dryness.    You couldn’t even tell there been any skin issues at all – back to normal.  Totally amazing.

Krusteaz Key Lime Dessert Bars

I’m not too big on desserts – or any sweet for that matter . . .  not counting pralines and eggnog ice cream . . . BUT when I saw the mix at the store for Key Lime Bars knew I just had to give it a try.  And  after eating just one bar – wish I’d bought every box of mix on the shelf.  They WERE delicious.  It’s not very often that you can find a mix that delivers a restaurant quality and presentation – but these key lime bars are a rare exception.  Just like eating key lime pie.  Best part they were so easy to make.  Everything comes complete in the box – crust and filling – so all you do is follow 3 easy steps.  Only things you’ll need are eggs and water.

2 Quick Tips

When you need to ‘grease’ a pan for a cake, rolls, bread, key lime dessert bars  🙂 – use butter.  If you use liquid oil, it will absorb into whatever you are baking and may cause  it  to stick.

To evenly spread the crust mix for Key Lime Bars or any base crust easily in the pan, after you’ve poured the dry mix into the buttered dish –  cover it with a piece of plastic wrap large enough to cover the entire pan and then use the back of a large spoon to spread the  mix.  You’ll get a smooth, level crust just about every time.

HEB Fish Fry

Much like the HEB Seasoned Flour – this fish coating is ready to go.  The original has a nice spicy flavor with a light cornmeal crunch.  It also comes in Lemon  for those who like a light citrus flavor.

Luby’s Cafeteria

LybysFish2Not too many place I used to enjoy eating out, but Luby’s was one of them.  They always had just about anything you might want and it always seem to taste fresh and  good.  David always wanted the fried fish, but I enjoyed the baked white fish with lemon-pepper.  Well since we can’t get to a Luby’s in less than 2 hours – I’ve started making some of my favorite  recipes here at home, i.e., carrot raisin salad, turkey tetrazzini from a Luby’s Cookbook   I bought a few years back.  (Note: The Luby’s Cookbook will take you to Amazon where the cookbook is available to purchase.)

After purchasing some cod the other day – thought the baked fish might be a nice change for lunch.    I’m posting the Luby’s version with my changes to the ingredients   in red.  I added the Panko crumbs to add some crunch since that is how David likes his food…. crunchy!!

Luby’s Baked White Fish

Ingredients:

  • 8 (7-8 oz)  skinless cod, haddock or other fish fillets
  • 1/2 cup all purpose flour (HEB Seasoned Flour)
  • 3-1/2-4 cups mayonnaise
  • Lemon pepper seasoning
  • Dried parsley flakes
  • Water
  • 1/2 cup Panko crumbs

LubysFish Directions:

  1. Heat oven to 350 degrees F
  2. Coat fish with flour (plain or HEB seasoned) shaking off excess
  3. Place floured fish in buttered baking dish (in single layer)
  4. Spread mayonnaise evenly over fish
  5. Sprinkle with Lemon Pepper, parsley (and Panko crumbs)
  6. Pour water around fish to a depth of 1/8 inch
  7. Bake 20-25 minutes or until fish flakes when tested with a fork.  Top will be a light golden brown
