It’s always nice to find a product that is ‘as advertised’. Tried a new product this week – P.F. Chang’s Orange Chicken. We’ve eaten at PFC restaurants a few times and really enjoyed the food – so when I saw these ready to go meals in the grocery’s freezer – knew I had to try one.

There are several different meals available – but thought I’d try the Orange Chicken first. We were not disappointed. It was delicious without a  ‘processed’ flavor.   Best part, it comes complete – all you do is add a side dish or two. In fact, it’s so simple – even David could fix this one. 🙂 . . . all you do is heat in a skillet.

We had more than enough to eat with plenty leftover to enjoy the next day. Dressed up the leftovers with a few sauteed shrimp mixed into it. It was equally as good second time around. For sure – we’ll be trying the other packaged PFC dinners next shopping trip.  (Get coupon)

Pillsbury Sugar Free Cake & Frosting

I’m always on the hunt for new ‘sugar free’ foods. So I was pretty excited to find a couple of new products last week while cruising the grocery aisles. Sugar free cake mix and sugar free frosting – both made with Splenda. Since it is hard to find a good cake recipe that is sugar free – thought I’d try out this new cake mix made by Pillsbury. 

Right now it only comes in 2 flavors – or that was all my store had – Yellow and Chocolate. Same for the frosting, only 2 flavors – Vanilla and Chocolate.

If the first cake comes out tasting good and has a good texture – I may try adding some other flavors to the yellow cake mix next time I bake to get different flavor. Lemon sounds good and should be easy to adapt the mix and frosting by just adding in some flavoring.

PS- Tried the cake mix and it is surprisingly  good. The cake texture is very soft -softer than traditional cake.  The chocolate frosting is something like a cross between marshmellow cream and Nutella.  Of course, we had to have ours with a scoop of ‘No Sugar Added’ Blue Bell Ice Cream.   (Get Pillsbury Coupons)

Baking Hints

If you’re  thinking  you might like to try a sugar free cake yourself, here are a couple of things I found out …

  • Follow baking directions closely. Cake bakes at a lower temperature than regular cake.
  • When buttering/flouring the pan before pouring the batter in, use extra butter and flour. The baked cake has a tendency to stick to the pan more than a regular cake. My cake stuck in one corner – so I had to do a little repair work on it.
  • When removing the cake from the pan,  turn it out onto waxed paper dusted with a little powdered sugar. This will help keep the cake from sticking to the paper while it cools.  (A sifter allows you to get an even thin layer of powered sugar.)
  • The frosting is VERY sticky. (My one complaint) To make spreading it easier, dip your spatula or knife in warm water while frosting.  This will help keep from pulling the frosting off as you spread it.

What is It????

Had a bit of a surprise when opening my can of green beans for lunch yesterday. There right on top was a long sprig of something. Didn’t look like any bean bloom I’ve ever seen.

In fact my first thought was “how did that caterpillar get in there?”.  Haven’t a clue what it might be. I’ll take it back to the store next visit.
