A Charlie Brown Christmas

bluebonnets_in_snowWhy is it that time seems to speed up the closer we get to the end of the year – Christmas specifically. I cannot believe that there is only one week left to get everything finished.  And that includes finishing getting ready for the next three days of super cold.  It is in the 70’s today – with very high wind –  and will be in the 30’s tomorrow.  Texas weather is amazing !

Doing some cooking today just in case we lose our power – not uncommon with high winds. Thought a pot of soup would be good as well as making some Baklava.  Great finger-food.   And since it’s made with walnuts, honey and lemon – somehow it doesn’t  make me feel guilty eating it.  🙂

.Also, freezing about three pounds of green beans I bought at the store yesterday.  Did a test-run on freezing them a couple of weeks back to see how they would taste when cooked.  Tasted really good.  So now I’m putting several packages in the freezer.

.greenbeans2016Just like corn on the cob, green beans are easy to freeze at home.

  1. Trim ends (cut bean in  pieces if you like – we like ours whole)
  2. Wash them off
  3. Place beans in rapidly boiling water (uses a large pot to make sure there is enough water to cover them)
  4. Boil for 2 minutes
  5. Remove beans from boiling water with slotted spoon and place in ice bath
  6. Leave in ice bath for about 2 minutes then place in colander to drain
  7. Place however many beans you will use as a serving in to a zip bag and freeze.

Note: You can label them with date and name if you like.

Another thing, doing my laundry today. Don’t like doing laundry on Saturday . . . . but since I like to dry my clothes outside (love that smell)  this will be my last warm day for a while.   Only use the dryer when I have to and after hearing the story from our insurance agent, that’s probably a good idea.

Seems the fuzzy lint in the exhaust hose caught fire and burned his house completely down. So sad.    He recommended we should check our dryer for lint build-up – so passing along  that bit of advice.   Something worth doing – especially if you use the clothes dryer often.

While out doing a final check of the front yard earlier this week, saw my poor, little dogwood tree. It looked so sad.  Made me think of the little tree in the Charlie Brown Christmas special.  You know, the one that is so droopy and sad.  Well my little dogwood is pretty much the same . . . then I saw a beautiful red nut (?) on it.  Looked just like a Christmas ornament.    It was the brightest red and so smooth.  Have never seen anything like this on it before so have no idea what it might be.  Had thought of cutting the little tree  down, but will leave it now to see what it does next year.

David and I went to visit Kathleen & Dwight yesterday (cousins).  Mention this because  it was a major deal as far as the distance and we had a great time visiting.  This was the first time we’d ventured further than a 40 mile  trip and were not sure David would or could make it.  But he did!   He was pretty tired when we got home – and still tired today –  but at least not in any major pain which is a blessing.  Slowly we are ‘getting back to normal’.
